About Taco Revolution
Ixim was started as a passion project by Michelle Paez and PJ Frayne out of their small home kitchen on Gabriola Island in 2015. Having returned to Canada from living abroad in South America, they missed the wonderful tortillas and other fresh foods that they had become accustomed to. Searching grocery stores all over Vancouver Island, they couldn't find a corn tortilla that came close to what was commonly available in Mexico. So, they purchased a small tortilla press and started making their own.
Several members in their new Island community heard about the tortillas that PJ and Michelle were making, and invited the couple to set up a booth at the Gabriola Farmer's market. The tortillas were an instant hit, and the passion project quickly turned into a hobby business. Within a year, Ixim Foods Inc was incorporated and was selling tortillas from 4 different farmer's markets around the Island. But tortillas weren't enough. People wanted ready-to-eat tacos! Beginning in the second year, the Taco Revolution food truck was built and put into service. It was a huge hit and quickly attracted a large following. Ixim Foods was no longer a hobby business.
The building of a commissary kitchen quickly followed, and with it an expanded product line. Over the course of the last few years, Taco Revolution has grown to become a highly regarded and recognized brand of Mexican Food products on Vancouver Island. And we continue to grow. -

Mr. Norman Cooper as born in Coventry, England in 1914. He travelled to London at the age of 18, where he worked in the food markets. He obtained work with the British Lever Brothers & soon after was sent to Nigeria (British West Africa) where we spent the next twenty years living, marrying & working as a District Trading Officer. Norman then served as a commissioned officer with the British Armed Forces where he “trained and secured his territory for the crown” These were the most wonderful and happiest times of his life – he often regaled his audiences with colorful & entertaining tales of Africa.
YOUR MEAT PIE EXPERTS / OUR HISTORY
This is where Mr. Cooper worked developing a distribution system for the food division of Maple Leaf services (forerunner to the Canadian Armed Forces exchange system) for a number of years. After working as a business consultant in Ottawa for a few years, Norman moved his family to Edmonton where he was employed with developing IGA. That is where he would later come out of retirement to begin Mr. Cooper’s Pie – a chain of restaurants with Mr. Brian Cooper in 1982, at 68 years old. Mr. Cooper’s Pies quickly grew a following for their scrumptious pies around Calgary – successfully expanding to 11 chain restaurants. It was there they sold fresh baked daily quiches, sweet pies, sausage rolls and of course English Meat Pies! Unfortunately, due to the economic crash in Calgary Mr. Cooper’s Pies closed but the timeless recipes lived on through our family – all these years. Brian continued to bake & make pies throughout his children's lives – raising them up on these classic pies!

In March of 2020 when the global Covid-19 pandemic hit – our family, like many others, struggled with the closing of their small businesses. It was at this time that Mr. Brian Cooper teamed up with local community member Shane Dagan, of the Steveston Seafood House. Brian owned a Bed & Breakfast in Richmond for over 20 years and Shane found himself in a similar situation with his restaurant, open since 1978, being closed as well. That is when the family decided to pivot and the resurgence of Mr. Cooper’s Pies began. Mr. Cooper started producing pies out of the Steveston Seafood House. With Shane’s savvy business and community involvement combined with Mr. Cooper’s timeless English Pie recipes – it didn’t take long to amass a loyal local following. They began distributing to local butchers & retailers throughout the lower mainland. Now with over 50 retail accounts – Mr. Cooper’s Pies proudly provides local, handmade pies throughout the Lower Mainland and Victoria! They also recently won “Best Mid-Sized Business of the Year” by the Richmond Chamber of Commerce for 2021. Mr. Norman Cooper as born in Coventry, England in 1914. He travelled to London at the age of 18, where he worked in the food markets. He obtained work with the British Lever Brothers & soon after was sent to Nigeria (British West Africa) where we spent the next twenty years living, marrying & working as a District Trading Officer. Norman then served as a commissioned officer with the British Armed Forces where he “trained and secured his territory for the crown” These were the most wonderful and happiest times of his life – he often regaled his audiences with colorful & entertaining tales of Africa.

This is where Mr. Cooper worked developing a distribution system for the food division of Maple Leaf services (forerunner to the Canadian Armed Forces exchange system) for a number of years. After working as a business consultant in Ottawa for a few years, Norman moved his family to Edmonton where he was employed with developing IGA. That is where he would later come out of retirement to begin Mr. Cooper’s Pie – a chain of restaurants with Mr. Brian Cooper in 1982, at 68 years old. Mr. Cooper’s Pies quickly grew a following for their scrumptious pies around Calgary – successfully expanding to 11 chain restaurants. It was there they sold fresh baked daily quiches, sweet pies, sausage rolls and of course English Meat Pies! Unfortunately, due to the economic crash in Calgary Mr. Cooper’s Pies closed but the timeless recipes lived on through our family – all these years. Brian continued to bake & make pies throughout his children's lives – raising them up on these classic pies!
FAST FORWARD TO TODAY
In March of 2020 when the global Covid-19 pandemic hit – our family, like many others, struggled with the closing of their small businesses. It was at this time that Mr. Brian Cooper teamed up with local community member Shane Dagan, of the Steveston Seafood House. Brian owned a Bed & Breakfast in Richmond for over 20 years and Shane found himself in a similar situation with his restaurant, open since 1978, being closed as well. That is when the family decided to pivot and the resurgence of Mr. Cooper’s Pies began. Mr. Cooper started producing pies out of the Steveston Seafood House. With Shane’s savvy business and community involvement combined with Mr. Cooper’s timeless English Pie recipes – it didn’t take long to amass a loyal local following. They began distributing to local butchers & retailers throughout the lower mainland. Now with over 50 retail accounts – Mr. Cooper’s Pies proudly provides local, handmade pies throughout the Lower Mainland and Victoria! They also recently won “Best Mid-Sized Business of the Year” by the Richmond Chamber of Commerce for 2021. We strongly believe that it was our family’s ability to pivot during these difficult times that secured Steveston Seafood House this prestigious award and we look forward to continuing our expansion throughout the Lower Mainland, British Columbia and beyond!We're Restocking
